Yes that's technically true, but the original NFT would be authenticated and traceable back to her address (or her "organization team") so you know it's the real deal.

It's kinda like how Pokemon cards were issued by Wizards of the Coast and had verifiable things (card stock, BIN numbers, printing modality). It wouldn't be the same if I just copied and tweaked a Charizard card in my basement as it would be pretty easy to verify as not the real deal. Except here it's even easier - just look at the originator author's address.

I just had an idea... I wonder if I could go on any of the drawthreads in one of these boards... and say I draw something neat. Not even immaculate, or perfect, just something requested and it's cool. I could sell 1, 2, up to maybe like 5 NFTs of that artwork and make a quick buck off of not just one anon, but multiple. And some NFT sites pay a commission for EVERY sale of an artwork even past the initial, so if that artwork just so happens to become notable in that community, I've just set upon a goldmine.
