So I invested in BTC back in 2017 and want to sell when BTC hits 50K. I dont wanna take it out to my bank account because then I have to pay 30% tax. Can I instead transfer BTC to something that is stable, so I can buy back the BTC at 30K and then I have 20K to invest into something further WITHOUT withrawing it to my bank account?

There's a reason the saying is "death and taxes."
The IRS has an infinite labor pool and an infinite amount of time to look into the little mundane details of your tax return.
They pay sad little people to comb over them with red pens.
Then those people transfer them to even sadder people who examine them even further.
And on and on it goes.
And maybe a few months down the road, maybe a few years down the road, you receive a letter in the mail informing you of a discrepancy you need to clear up.
You don't keep receipts, you don't even have a file cabinet. You are fucked.

Here in EU we have bitcoin ATMs and some stores. They take around 10% and you need several trips to cash big amounts tho. Too much cash is a pain in the ass too

Both these stablecoins survived the March gigadump, so I am sure it’s as safu as it gets. Plus APY on stablecoins is pretty juicy.

Change your BTC to 50k USDC (A coinbase backed stable coin)
If you wanted to invest the 20k in a stock or something there are mirrored coins like mamazon that are backed by the actual stock. That's your best bet. I would suggest keeping these in some kind of wallet instead of an exchange aswell.

Btc -> Binance -> Sell BTC for USDC -> Withdraw to your Ledger or other eth wallet. Optional use the USDC to earn interest on Celcius or Blockfi (safe), yield farming apps like curve, yfi, etc (risky).
When a dump happens, reverse the process.
