Finding a market for your area will be dependent on your location. Ideally you'd sell in an area with demand for exotic meats, avoid the licensing of selling meat yourself and sell to wholesellers that service restaurants and markets that stock exotic meat themselves.
Nickyusa on the west coast and Blackwing and Exoticmeatmarkets elsewhere (in the US).
The market is big enough and the product in demand that a modest farm can provide the much needed supply to the specialty outlets.
And as mentioned throughout the thread other goods like feathers, leathers and oils can be collected for other less-perishable commodities.

Ostriches eat the same roughage cows eat at about a 1:10 feed to weight ratio for a fully grown adult. The chicks and juveniles eat more at a 1:2 then 1:5 rate as they grow but an adult only needs the 1:10 for maintenance.
The longevity of the birds is important because they can live over 20 years in domestication.

Must've had the indoor spacing for his birds, it gets below freezing in Idaho, ranches there have heated shelters. People really underestimate these birds, they can tough out the cold. Forgot to mention. I have it saved somewhere but I can't seem to find it. There's a study concerning the habits of Ostriches in captivity.
Even when fed Ostriches like to peck the ground and eat a little dirt like 50% of their standing hours. Alone, if it's in a group it's about 65% with the extra percentages dedicated to patrolling and vigilance (standing upright, neck outstretched and scanning horizon) 15-20% of the time.
Ostriches will dedicate more time to "vigilance" activity the fewer birds there are in a group.
What this essentially means is that they like to meander in a group, peck the ground and take turns looking for threats.
Even when they feed they only dedicate 5% of their actual waking hours to eat from a food source that wasn't foraged.

Chicks can be bought for as little as $300 if you want to go that route. Similar to how cows are priced 'on the hoof' and as hanging weight you can expect to subtract some weight from the bird for your total $ per #. Though with an Ostrich there's much more hanging weight even after the gut is removed. Can't remember precisely the rate but much higher than beef as far as usable meat to weight.
