Say I bought 1000 dollar worth btc, traded it for a shitcoin that went up, than traded it to 5000 dollar worth btc and cashed out to fiat. How exactly is that taxed?

1k purchase of BTC

Trade BTC for Shitcoin - Boom, 1st taxable event. If the BTC gained in value while held you owe tax on that gain

Shitcoins go up to 5k, you trade for BTC - Boom, taxable event 2, you owe taxes on the gain to 5k

Now have 5k BTC, cashout - taxable event 3, if the BTC gained in value before you cashed out to FIAT you owe taxes on those gains.

Make sense?

No.
You pay taxes on selling or exchanging for good or service.
Example: Buy BTC for $1000, trade trade trade Sell BTC for $5000. You pay taxes on $4000 of income.
Or, buy banana using BTC. Pay taxes on value of said transaction
BTC according to the IRS is not a currency but an asset. Go look at what that means
You don’t pay taxes if something you own becomes valuable, only if you sell it
