You need to trade for most of them. You buy eth, put it in your spot wallet on Binace, then go to the binance trading platform and find the paring you want (ie ETH/DOGE), then you place an order. It will take the eth out of your spot wallet and put the doge into it

I don't know what other coins coinbase has but if you're just moving it to another exchange pick something with the cheapest transaction fees, eth gas prices are pretty high currently
