They're not actually buying the stock when trading derivatives, they're saying they'll buy or sell X amount of it at Y price at a future date. Their total bet just happens to be for more than all the GME shares in existence, which would force them to buy it, sell it and rebuy it again to fulfill their obligations.

If they go under they'll have to sell off whatever else they've got to cover the loss, the effect of doing so could be significant. Not only would it risk tanking the prices of other stocks but could have a knock on effect in fucking up other funds who trade derivatives the same way.
