If you buy into a pool other than the infinity pool (which contains only STA and wSTA) my understanding is that if statera outperforms the other coins in the pool then you will lose out on potential profits because your pool share consists of x% STA and y% other coins.

I did the same but it doesn't bother me at all. DCA into the pool and you WILL win in the end, just select price points to pool a percentage of your stack. Eventually there will be crabbing and retraces, that's when pooling pays off.
