I know these, they come in many varieties and they need to be boiled because they contain a mild liver toxin right? Theyre also hardy and they can grow forever and multiply. Very nice tubers.

Nah they're best slow roasted or slow air fryed, e.g. air fryed for an hour at 140 deg C.
They were an Incan staple and died out but New Zealand got them as a colony and they survived although they are making a comeback over there now. I imagine NZ has better varieties too because in the past farmers were very obsessed with developing the best crops since it was hard to import stuff and ended up being good at it
