ARM processors are gonna be huge in the tech world. They are about 3 times faster than current ones and they consoom a lot less power resulting in a much longer battery life

NVDA owns ARM now, so they're an obvious choice. Probably a safer bet than apple if you're purely interested in ARM tech.
NVDA is a good buy in general too desu, many academics and businesses rely on CUDA, which is specific to nvidia's processors.
I've worked on GPU accelerated stuff, and I was basically forced to use nvidia due to CUDA. They're set to really take over in a lot of domains.

what x86 instruction does photoshop use that makes RISC impractical?
Vectorization extensions? It's hardly necessary when you have a GPU.
I can't think of any image processing techniques that aren't practical on an ARM+GPU computer setup, and my job is writing code for image processing.
