Votes are tracked and tied to the person. To vote you have to literally steal someone else's without them knowing it. Votes can be thrown out for any number of reasons: missed signature, multiply cast, felon (in some states). And there is oversight from both parties at every level literally.

You have no idea what goes on when votes are counted. There isn't one person who sees the vote from start to finish (local level maybe, which is why voter fraud cases tend to concentrate there). The amount of effort to do it for one vote isn't worth it and would require an entire apparatus of poll workers, watchers (of both parties), county officials, postmen, etc. to all be in on it yet not "spill the beans". Most of the time when recounts happen they ADD counts that were previously discarded unjustly harshly.
Trump whined about Wisconsin in 2016 and got a recount there for much the same reason as he's doing now. Over 2 million votes, he got 300. None of those 300 were fraudulent.

There are methods of detection. First, did you register for that polling place. Second, is there already another vote from that person elsewhere. Third, did they request a ballot. Fourth, did they register to vote. That is just the first easy layer. Any one of those things tosses the ballot out just right out the door with little legal consequence to yourself. To organize this on a massive scale would require knowing who are registered voters who AREN'T intending to vote and where they are voting, then to cast those votes at those polling places. It just isn't worth it beyond the county level if you want to attempt it. And you need a lot of people in on it and it grows exponentially as the total votes increases.

In other elections those votes are simply not counted unless things are close enough. This election is unusual in how many were requested and so they were counted from the get go. It is facetious and a downright lie to think Republicans got "blindsided" by absentee ballots.
