Morphtoken is a website that allows you to autoswap one crypto for another. If you would rather use an exchange, tradeogre is pretty useful for getting small amounts of Monero and is available in New York.
Alternatively you can get around this by buying Monero through Local Monero, which will avoid KYC regulations.
For wallets, Cake Wallet and My Monero are both lightwallets that are very easy to use. I'd recommend using those. When you create your wallet address with Cake or My Monero, you will need to write down your seed, which is the private key for your wallet address. Once you send the monero off the exchange or from a website like Morphtoken to your wallet address, you are now in sole possession of your Monero (which means only you know how much Monero you have, and there is no way anybody can see what happens to your Monero afterwards).

Monero uses stealth addresses. You can't follow a transaction to a wallet address. It's not like Bitcoin. The recipients public address is mixed into the transaction, so only the recipients private key is able to see and unlock the transaction.
If you go through a KYC then the exchange will know that on a certain date/time you removed x amount of Monero from your exchange wallet. But at that point it disappears and there is no way of knowing where the funds have gone. You can assume that the person the KYC account is tied to withdrew the Monero, but it can't actually be proven. Plausible deniability.
