Also from what I am seeing is that STA is basically just a way to hold a basket of assets? Why not just buy those assets? Is it because it does all the work of rebalancing it for me? Also do I have to join the liquidity pools? Or is it better to just hold STA?

You gain passive income from the pools. You essentially become a fraction of the gas price for the transaction being made and a portion of the fee is paid to you relevant to how much you initially pool'd. Its a index fund that is on autopilot basically. You can pull your funds at any time as well.
