You could start out online (I know, antithesis, but even LCS tend to have online presence) and build a rep on local enthusiast sites by having good business practices, prompt and professional face-to-face meetings, maybe throw in some nice extra stuff to get the word-of-mouth going. Marketing you can do online yourself. Then open a brick-n-mortar when you've built up a clientele.

Yeah definitely don't do labor-intensive stuff like steak etc at first. Start out with a couple coolers full of pre-packaged beverages, sell 'em yourself at profit. As the biz picks up, maybe hire ONE FWTDHW or maybe just her QUD. She can make great $$$ in tips when biz picks up enough to add coffee, tea, maybe even mixed drinks if there's enough demand.
I wouldn't add a kitchen. Stick with beverages, PM accessories, and various low-cost, non-labor-intensive, high-profit items.

If you end up in a situation like this where cash is going out and metal is stacking up with no buyers you could always pass it down the line by selling several hundred ounces to a larger dealer like jmbullion, they are always looking for inventory. If you anticipate a moon mission ahead of time you could even set your prices in such a way that selling to the bigger dealer turns you a small profit.

If you run a coin shop properly, that is something that you should never be worried about because you should be hedging all of your transactions through the futures market. You should be buying at one price and selling at a second, higher price. You use the futures markets to protect that spread that is your gross profit.

This can be seen just by looking at the dataset for higher incomes ranked against IQ. You don't need to do a regression to know there's nothing predictive there. So if someone has a 140 IQ you can't really predict they are +2 sigmas in income, but if someone has a 60 IQ you can predict very well that they are at least -2 sigmas in income. This is the core point of the argument, but Nassim Taleb loves trolling psychologists so he made a bunch of other points.

The relative value of silver vs. gold is more affected by supply than these chemical processes. There is argument that if silver and gold were equally plentiful that silver would be more expensive because of its industrial uses.
