I would assume it is like running a TOR node. You are not liable for other user's traffic. TOR has letter templates for LEO and DCMA requests.

sentinel will have 3 types of nodes:
-relay node (for normal users) this type of node never gets in contact with the clear data and only act as a relayer in the multi hop protocol, so people hosting this will be 100% safe
-tor exit node here the exit node funnels the data into tor its tought for people that run tor nodes already to offer them revenue for their service
-normal exit node this will be for experienced users, data centers and people that host tor exit nodes already it will have a higher risk but also higher reward

monetization can make it faster then tor cause if you pay more you will have higher priority and access to nodes with higher bandwidth and lower latency, premium service > free service in terms of quality , also sentinel allows to host free nodes too, so you have the best of both worlds.
you will be able to exit directly into tor think of it as a way to reach security through layering:
your pc > relay node 1 > relay node 2 > relay node 2 > exit node > tor
(you can add as many relay nodes as you want, if even one of them is safe you will be protected from surveillance)
