Or can somebody tell me why everyone doesn't just regularly transfer all their crypto into whichever shitcoin is currently making the biggest green candles?

Even if you have to deal with transaction, transfer fees whatever you'd still be making a profit.
As soon as it starts to dip just move it other into a currency that is rising. Simple.
