Alright so basically you pay a premium to bet that the stock will reach x price by y date. The faster and closer the stock gets to x price (or past it), the more money you make. Potential gains are big, potential loss is only as big as the premium.

Effectively correct. The part where you can trade them and how the price movement of these contracts evolve in relation to the underlying price movement enables even more opportunities.
Also the traditional use of options is hedging. You think the price goes up in the longterm, but the price action is unclear in the short term. You buy a call. If you're wrong, the worst that happens is you assume an upfront cost. The best that can happen is different between strike and price + premium less the actual price action of the underlying, that is infinite potential gains.

Autarky basically, I think China will still increase oil consumption but demand will still fall worldwide just from the bloated western middle class being wiped out. The oil industry will run off their remaining conventional reserves, the oil sands, fracking, and other high cost projects will simply be closed permanently.

I think oil will hold a special place to maintain the transportation infrastructure and operate heavy equipment, because there is literally nothing to replace it.
