What's so special about a growth based economy anyway? Who decided this is the standard everyone should follow? Why not focus on quality over quantity?

Quality is growth as well. Technological and scientific advancement contributes a lot to economic growth. Anything that brings us closer to robot slaves doing all menial jobs for us WILL grow the economy. Eventually, these robot slaves existing will mean that all of our basic needs in life will be free: food, shelter, water, transportation, energy, material harvesting. That is when it won't matter much if the economy grows or not since everybody will have a shelter, food, and other basic needs.
