Lets say I have 500k in tether
Can't I just go to Portugal, live there for one year for like 10k in rent, then cash out and get the full 500k.
Instead of losing 150k in a taxed country.

I don't know about Portugal. But I have a friend who tried it, by buying an apartment in Monaco. He thought declaring his permanent residency there was enough. They actually sent agents to check on that apartment and ring and knock a few times. When he was never there, they visited him at his real home, in western Europe.
It doesn't work.
What does work is to declare no residence at all! And travel constantly, living in hotels only. But who really wants that? And who can and wants to afford to?
And that sort of lifestyle?
To evade taxes in Europe is nearly impossible. At least unless you are a billionaire already.

There are plenty. Some small tax haven countries even only require living there 1 month per year to establish tax residency.
Of course I'm not talking about the USA, apart from lower taxes and guns they are absolutely cucked by their government, they need to renounce citizenship to not pay taxes even while living outside of the US, and the government apparently makes it very difficult and often refuses citizenship renunciation.

In France it's only 1 year living in another country for 6 months and 2 weeks. After that you are "legally" free from French tax authority and you can chose to establish residency and pay your taxes wherever is more convenient. if you comply with the rules of your new country you should be set tax wise: usually its something like stay slightly longer then 6 months in the new country and do this for a year to be set

also getting new residency is still fully supported by the eu and there are several countries that still do not tax crypto
but do not fake it go live in portugal for a year ensure you are fully registrated with the local authorities, living in portugal with the gains from northern economies can be quite nice

Andorra is an option with no capital gains tax

“Category A” residency requirements: spend between 90 and 182 days in country. Prove you have invested more than 400,000 euros in the Andorran economy (for example, 400k of gov. Bonds (possibly buy property in country worth more than 100k?)

This gets you residency and you can cash out with no tax.
