Bitcoin is better money than Eth. ETh is the commodity that powers Ethereum. I just don't think it has any real fundamental reason to go up, even with staking or Eth 'locked' in Defi. OF course it will just based on speculation, I just don't see it going crazy on actual use because it's nonconsumable. Once you use ETH it goes right back on the market.

I think this way because I use ETH just about every day. I trade on synthetix and fulcrum, and a few other dexes I'm not willing to mention yet. I don't need a massive amount of ETH to do this. I buy ETH maybe once a year and not for speculation, but just to use the network.

That's not really an answer... just saying it doesn't make it so. If BTC was on Ethereum, how would BTC be better money than ETH or any of the many stablecoins?

About 3% of ETH is already locked in defi. This will continue to grow, and a larger percentage will soon be locked for staking. EIP1559 will massively reduce inflation. A supply shock is guaranteed as these facts become more widely known. I'm surprised you don't see this as a fundamental reason to go up - it's pure supply/demand stuff, as fundamental as it gets.
