You're thinking too far ahead. All exchanges that aren't pajeet-run these days will keep your history anyway, so it wouldn't be a problem. This was only an issue for people that traded before the era of Binance.

Your logic of selling only when something moons is the exact thing that causes FOMO when you sell it all in one pump, then it keeps pumping and you buy back in wanting to catch more of it. Selling in pieces prevents the emotions from taking control.

I think it depends a lot on what you're planning on doing and the projects you're investing. Crypto should never be your only investment obviously. But if we're talking about projects like Chainlink, which, if they work they could be worth A LOT, then you should plan on selling every X percentage. You also need to know how much you're willing to lose, and how comfortable you are with the price movement. Example:
Let's say I buy 10,000 LINK at $1. Then it goes to $4. At this moment you could evaluate and think... well it could go much higher, but also lower. Am I willing to risk this opportunity to at least cash out some % of what I invested? How would I feel if it goes back to $2, or $1, or even lower? At the end it depends on what you think will happen with the project long term and how you feel about losing or gaining X amount. One thing is clear though, and I learnt it at the very start of 2017:
1. NEVER FOMO BUY.
2. NEVER PANIC SELL.
You should use your head whenever you're feeling strong emotions. Every moment you feel some kind of uncomfortable euphoria inside your chest and the need to market buy (FOMO), or you feel extremely discouraged and depressed and want to sell (panic selling), STOP for at least 1 minute and think rationally, DO NOT act on your impulses.
Also, if you made a move, like you sold 2000 LINK at 4$ and got 8k back, and it keeps going up. DO NOT feel bad, do not feel guilty. Stick to the decisions you made. If they are rational then they are OK. The only time you change your mind is when you realize your first move was actually retarded and based on emotions, then you correct your course.
