Also if I take 2 additional classes I get a non ABET accredited ECE degree (the mechatronics one is ABET accredit and I can sit for my PE so I don't think it matters)

In the end, it comes down to the same question - what do you want to do? Sure, with this degree, you can do moth ME and EE, but you won't know ME as well as a dedicated ME, and you won't know EE as well as an EE. For some industries, that's perfect, but for others you'll be at a disadvantage. Think first about what you want to do with your life, and then figure out what you need to do to get there.
