I'm a leaf and there's a lot stopping me from moving to bumfuck nowhere, like no work, no grocery stores, no post office, etc. so I doubt that's a good idea. There's few people that want to give all of that up.
One idea I did have is taking the poorest areas of the country and creating an industry building modular homes at super cheap rates but still good quality. Just a turn key solution that you could ship anywhere in the country that matches the state/municipalities code, so people don't worry about hooking up water lines and electricity, and plumbing, and laying the foundation.
Combine that with an easy tool for customers to customize a home to their liking (or just picking a preset design), along with solid mortgage rates, and perhaps even helping you get a piece of land/property to place the house at time of purchase.
All of that could revolutionize home purchasing, if a company could manage to do all of that, streamlining the process for customers while at the same time undercutting everyone else they would become the amazon of housing.

My family's owned a country farm for two decades now and I've lived on it for around 10-13 of those years. The maximum extent of food gathering is checking the chicken pen for eggs, maybe the mulberry tree has some berries on it, maybe the lemon tree or peach tree has some fruit on it, maybe the garden patch has some lettuce, cucumbers, tomato's etc in it. And note that unless you have a professional farm and maintain it full time your yield wont be enough to last more than a week or two anyways. There is absolutely zero need to take up botany and learn different plant types unless it's a fucking hobby for you, any cityfag can open up a forager website on their phone if they want to be able to tell plants apart. Apparently drug growers are massively into that anyways and there are plenty in the city. I know city fags come out and hunt for psilocybin mushrooms and other stuff out in the country successfully all the time.
What you end up doing is buying in bulk whatever is on sale when you have to do the hour long drive into the grocery store. So you drive back with like 200 cans of soup, a fuckload of meat pies and bottles of soft drink and other stuff you can afford. It's literally worse than city fag living.
