I've got £1000, roughly $1250 dollars right now that I can invest.

I'm looking to make money taking as little risk as possible to get there. I don't mind investing in altcoins, other choices, but I want to make sure I don't just blow this.

How should I go about this? What's the safest way for me to double this?

I think the time frame is pretty important. Maybe break it up into 4 chunks and try to double each chunk separately.

You can still pick up Tesla stock for the same price as the end of 2016.
I'd say it's pretty safe to say it will double eventually, nobody owns and electric car and no way Elon will let that company go under even if it means he'll go down from a billionaire to a millionaire.
They are building a giga factory in China and are scouting for a location in Europe.
Tesla also own Solar City, which produces solar panels, a market that will hardly become smaller in the future.
So buy some Tesla. It'll take years to double in price but it'll be safe.
