It's neat to know, so I'll keep it as simple as I can.

When you wake up, molecules called adenosine go into adenosine receptors (located in the brain) which slowly help make you tired. When sleeping, adenosine is released from the brain overnight.

One part of what caffeine does is it competes for space on adenosine receptors and keeps adenosine from reaching there. The body, looking for homeostasis (a middle ground), starts to produce more adenosine receptors over time as long as caffeine continues to be consumed. The more caffeine, the more adenosine receptors are made.

When someone such as yourself stops injesting caffeine, adenosine has tons of receptors to latch onto. This in part causes daytime fatigue. Over time without caffeine, your brain will reduce adenosine receptors as it reaches an equilibrium.
