>What's the difference between a mixnet and I2P?

Mixnets are better at shredding meta-data.

>Not only does the mixnet encrypt message content, unlike any other technology available today it also protects patterns of messages from analysis or surveillance.

I2P actually uses a specific type of mixnet called a free route mixnet, where the user can choose the length and the path of the tunnels and where the messages are split into fixed-size cells and sent at regular intervals.

Mixnets typically have more latency because messages have to be shuffled together first. They use up more bandwidth too.
