Just a tip OP. Reverse sear method is scientifically the best method. Alton Brown has a special episode about this. I tried to imitate the episode with mixed results but I don't have a commercial oven so temperature can be a problem.

I found the best way to make steak is to salt your steak both sides with sea salt, then let it sit out until the steak is room temp. This is important as it allows the muscle to relax. Then throw it in the crockpot on low for one hour. This will tenderize the meat more than a marinade and start the reverse sear process. You then want to get a cast iron pan, season it slightly with butter when it is 500 degrees. You can tell cast iron is 500 degrees when you can put a dollop of water on the pan and it instantly evaporates. Once your cast iron is 500, take the steak out of the crockpot, dry off both sides with a paper towel (important to get a sear), then throw it on for 1 minute exactly on each side. This is important, only 1 minute on each side. When it is resting after searing both sides, throw butter on top and let the butter melt into the steak as it rests. Real butter too, not some bullshit margarine.

Thank me next time you make a steak. Reverse sear method is the scientifically best way to make a steak and will make a perfect medium steak every single time.
