They're not "making it expensive" it's going to become expensive because the cost of creating it is high. The land and water requirements of beef production are huge, and as those resources become more scarce, so will traditional meat.
Insect protein is an alternative to just not being able to afford meat in the first place. If you are poor you will still be able to go vegetarian.
These solutions are literally offering to fill a gap, they're not forcing you to do anything.
