What are the minimum goals for staking here? I personally want to get at minimum 200oz of silver Britannias, 10oz of pure gold coins and 10 double sovereigns. From that point onward I will be mainly staking double sovereigns and maybe some pure gold and silver coins if they've got designs I really like.

You're paying for a proof coin that's why. There are different grades of coins:

Bullion
Brilliantly Circulated
Proof

A proof coin has the highest quality minting done to it. They are meant for collectors, not bullion stackers.

Yeah I love the Tudor Rose on the EIC one, I just hate that particular portrait of the Queen on the Obverse. I also prefer double sovereigns, the size is just right for my personal tastes.
