because the government has a monopoly on organised violence
organised violence is self-evidently more effective than unorganised violence, and thus any state entity which does not have a monopoly on organised violence invariably gets invaded, or otherwise taken over, by an entity whose violence is more organised, and thus more violent

this is why more heterarchical (flat) systems of government (anarchism, communism, and the like) cannot function in any way similar to how they are described on paper; they are too vulnerable to external and internal monopolies on violence forming and enacting a coup d'état

for your government to even BE your government in the first place, it HAS to be the case
the law of the jungle is a inescapable law of reality

a more interesting question would be WHY they take 30-60% of your income
