I honestly thought about the exact same thing.
A platform where paying in Monero is the mandatory way. A decentralized webside that is organized P2P.

Once a week, we have a local market here, where farmers and owners of local small businesses do sell their stuff.
All from vegetables, cheese, meat, milk honey, candles and other stuff neat to have.
I talked to some of them and they are all pissed at the goberment for taxing the shit out of them.
None of them said it directly, but some gave me a hint on only being able to survive economically, because they sell one or the other thing besides the cashier.
And that's a hard reality for local stationary shops as well.

I honestly plan on organizing a meeting, to explain in detail what Monero is, how it works and how they can use non-KYC platforms to cash out via their kids and family if they should need so.
My guess is that from the merchants perspective the interest in using Monero will absolutely be there, but the biggest problem i see is to convince the customers to use Monero to pay for goods or services.
Never underestimate the convenience. Especially not, if it's conservative oldfags that naively belive the regime will never harm them or their interests.

Boomers are pest. And that's coming from someone being 49 years old. Lol.
