I’m roasting lamb fren. It’ll be rubbed with finely diced thyme, rosemary, mixed in red wine vinegar, and olive oil. Salt and peppered to taste of course.
Then make a basil greek yogurt sauce to help remove the gamey taste.
Although, if I remove some of the fat before cooking, I may not have to deal with the taste.
