i think they would rather just acquire a new brand to serve that part of the market, and then over time convert existing taco bells to that new branding if it does well - or really even just close taco bells and sell off older locations/end those leases and build new construction or remodels for the new brand

yum! recently acquired Habit Burger which was a local san diego chain for a long time, and now they're expanding it rapidly, because it's at a premium price point relative to cheap fastfood - its basically exactly what youre talking about although it doesnt have the health thing so much

if i were them i would jump on Bubbakoo's Burritos, new jersey chain that's basically doing what you're saying - seems to be expanding rapidly as it is, and doing quite well - and they also run wing & burger delivery ghost kitchens out of every location because they smart
