Look into dioscorea polystachya. A root perennial that grows "air potatoes" as well as a biannual root. (I say that because supposedly the root is only good to harvest after the second or longer year for most climates.)

I would also suggest okra, corn, and a legume. They seem to do best in shitty to decent soils. Okra is more of a hot climate crop, thoughever. I'm from the Southeastern US.
