Yep. "Delta" is just a short name it's known by in the STA community. It won't appear on the Uniswap page anywhere. Same thing for the "Infinity" pool.
You'll need to "approve wSTA", then "approve ETH", then "Pool" (or whatever the final term is.) You mentioned you've pooled in Infinity before - it's the same process as that.

If you're only going to pool for a short time you won't make back the cost of the gas you paid to enter the pool. The gas required varies depending on the pool. Balancer is more expensive than Uniswap but Balancer pools are offering a higher return rate. Also the Balancer gas fees are mainly the one-off setup cost. After that, it's cheaper.

As I see it, the STA token's primary function is to increase volume in pools. Because it deflates it triggers more re-balances of the pools; higher volume = higher fees paid to poolers.
Higher volume also has the added benefits of improving liquidity and reducing spreads = attracts more trading = higher volume = more re-balances...

Unironically, 90% of my memes are copying/combining things that already exist. The Supercharger one for example. I already had the STA logo, the font I downloaded, and I copied/pasted the engine from a stock photo site. 15-20 mins work. In pic related I repurposed exactly the same setup as the supercharger pic.
