Why couldn't i compare a commodity with another commodity who both have a spot price on the markets?
Because of high turnover due to limited shelves life? Is that why you think i can't compare to milk?

For milk they mostly sell UHT (ultra high temp°) in stores (like 90% of our milk), which stores can keep sealed for up to 4 months on shelves. So the rapid turnover isn't an especially valid argument.
Sugar and flour are treated to not degrade in a dry environment, stores can keep them sealed literally for years and they don't even bother with an expiration date, and they sell so much of it, expiration dates wouldn't change much.

And what about wood and coal? Why do we pay premiums in the hundreds percents range for those? Sure they take up space and logistic is a big chunk of the cost, but they aren't perishable, so why can't i compare them to gold and silver?

What 40% premium, IQ?
All i see is silver selling for $2/oz over spot... That's less than 10%.
