LINK is required to create a request and is used to pay node operators for fulfilling that request. The request query payload is part of the token transfer as per the ERC677 token standard (https://github.com/ethereum/EIPs/issues/677).). Requesters may also specify an amount of LINK that each node must lock as a penalty payment for bad behavior.

One of the major obstacles to adoption by major retailers is volatility. If you buy or sell things in Bitcoin or Ethereum, the price can fluctuate dramatically and wipe out potential revenue. You can't have that if you run a business. You need consistency to balance the accounting books properly from quarter to quarter for budgeting and managing expenses. Very difficult to plan when you don't know if the currency you just accepted will hold its value from day to day. So how do you solve this problem?

If I sell a coffee for $5 and accept payment in a near instantaneous resolving crypto transaction, and then immediately swap it out for fiat (handled by a smartcontract of course), then the risk of volatile budgeting involving crypto is no longer an obstacle to adoption and major retailers can move forward and accept payments in crypto. And so far we only know of one project that seeks to connect payment, retailer, and banking systems with the blockchain in a trust-less manner end-to-end.
