I can be correct about a thing but less correct than you. I can be correct about a thing but only from a certain perspective that's irrelevant in other contexts.
Detecting truth is like focusing a telescope, when you tune the focus how do you know when the image is correct? If someone directs you to the store and you follow the instructions and find a store, how do you know it's the store he was talking about?
You assume the most reliably reproducible information is correct and adjust your model of the world to account for it. The more reliable but still plastic your model is the more money and science you make.

Plato retold a story and added his own twist on it with metaphors about governance. Everyone assumed it was all myth and metaphors but then we went to space and found exactly what he described in a place we recently came to know was muddy in the time of Plato as described and flooded 12000 years ago as described. Why does everyone still think the guy was talking about a different made up store than the store he gave directions to? The models are too rigid, even more rigid than during the height of Christian religious zealotry and like then it got this way to serve the greed of a few.
