KYC is needed because of the regulator, it's actually for your protection. When you sign up with an accredited licensed exchange like Coinbase, you're funds are still yours even if they're raided by police or other law enforcement company.
When you sign up with an non-KYC exchange and they vanish or get raided, your funds are interminged (nowhere it's documented who you are and what's yours) and it's all frozen and the chance is slim you see any returns.
As for fees I recomment https://coin-metro.com/ since they're cheapest.
I only use them as fiat on/off ramp to buy eth and then trade on Uniswap.
If you're an idiot don't do Uniswap because you will lose everything, limit order on exchanges are failry safe.

Can you explain why you wouldn't want to KYC? Exchanges generally do not share information to tax authorities, but regulated exchanges offer you protections against scams.
An unregulated exchange can close the next day and there's nothing you can do about it.
