A pound of dry beans is standard for this kind of dish... that's like 6 cups when cooked?? A tablespoon is nothing, lol.
Which is why you need a few peppers and a pound of nice andouille assuage to infuse the "broth" with more flavor and spice. It's a cajun dish... it's supposed to have heat lol.
Forgot to mention, a few ribs of celery works wonders on the gravy texture as well. Serve it up over rice, naturally, so it can soak up the gravy.
