Is it better to use multiple subaddress for an exchange or just one?

For example:
Exchange with XMR > subaddress 1 XMR wallet Same Exchange with XMR > subaddress 2 (Same XMR wallet)
Same Exchange with XMR > subaddress 3 (Same XMR wallet)

Or is it better to just use one sub address per exchange since it is derived from the same seed phase?

Is it easier for an exchange to track you with one address or multiple from the same seed? Assuming it has one been "churn" once? Or is it untraceable regardless?
