Blueberry - Buttermilk Pancake recipe.

1 1/4 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
1 1/4 teaspoons white sugar
1 egg

Ingredients

4 medium flour tortillas
Rice or dried beans, to use as weights
1 tbsp. extra-virgin olive oil
1 onion, chopped
2 cloves garlic
1 lb. ground beef
1 tsp. chili powder
1/4 tsp. paprika
kosher salt
Freshly ground black pepper
1/2 c. shredded Cheddar
1 avocado, chopped
Freshly chopped cilantro, for garnish
Guacamole, for serving
Pico de gallo, for serving
Sour cream, for serving
shredded lettuce, for serving

Directions

Make tortilla boats: Preheat oven to 350°. Shape a large piece of foil into a boat. (It should be smaller than the size of your tortillas.) Place one tortilla inside foil so that the perimeter of the tortilla come up the foil sides. Repeat to make 4 boats. Fill each boat with rice or dried beans (or pie weights). Bake until the edges just start to turn golden, about 15 minutes. Let cool in foil packs until ready to serve.
Meanwhile, in a medium skillet over medium heat, heat oil. Add onion and cook until tender, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute more. Add ground beef, chili powder, and paprika, breaking up the meat with a wooden spoon. Season with salt and pepper, and cook until the beef is no longer pink, about 6 minutes. Drain fat.
Heat broiler. Remove beans and foil from tortilla boats and transfer the boats to a baking sheet. Fill each boat with ground beef and top with cheese. Broil until the cheese is melted, about 2 minutes.
Garnish with cilantro and serve warm with guacamole, pico de gallo, sour cream and lettuce.

4 large eggs
kosher salt
Freshly ground black pepper
1/2 c. freshly grated Parmesan
1/4 lb. deli ham, chopped
3 tbsp. finely chopped fresh chives, for garnish

Directions

Preheat oven to 450° and line a large baking sheet with parchment paper.
Separate egg whites and egg yolks, placing the egg whites in a large bowl and the yolks in a small bowl.
Season the egg whites with salt and pepper. Using a whisk or a hand mixer, beat the egg whites until stiff peaks form. Gently fold in Parmesan, ham, and chives. Create 4 mounds of egg whites on the prepared baking sheet and indent the centers of each to look like nests. Bake until slightly golden, about 3 minutes.
Carefully add an egg yolk to the center of each egg white cloud. Season yolk with salt and pepper. Bake until the yolks are just set, about 3 minutes more.
