Because Bancor BNT is the original god tier AMM and has functions that no other AMM is capable of developing and they all know that Bancor will beat Uniswap, and all other copy cats with higher TVL and higher token price. BNT supply is incredibly scarce compared to UNI and Sushi. There's only so much available. With 60% locked in pools and increased demand + bullish unlocking and restakings + L2 Arbitrum + DOT bridge this token is set to explode. Don't buy it though if you hate money.
