the way to do it is to mince it, throw in spice, little mustard and ketchup, some anchovies and capers chopped, an egg yolk and eat that shit raw. but if you can't make steak tartare and be an eskimochad 24/7, there's nothing wrong with getting milage out of a grill i guess. I just find it useless unless its a means of cooking while talking with everyone whos drinking outside. it is definitely an inferior taste. brining first can help it retain some water.
