High rates increases cost of lending. Shitty companies get wrecked and the system tightens. Metals and forex and bonds become desireable. Speculative stocks are best with low interest rates.
A Fed pivot is bullish for gold because of the CHANGE of rates. Eg when they slow down or reverse rape hikes its because they overdid it, which means a correction is likely, which causes a flight to safety (gold)

You can use cash settled futures or CFDs (better imo). Depends on your broker. For example the FX broker I use lets me do metals and WTI and Brent but livestock, grains, and softs arent there. Best thing I can do for those is something like SOYB or CANE. Picrel is the sort of approach I have to take
