Of course the health inspectors would be interested in how you provide buffer from your fields to the creek. I'm pretty sure the cow would create a biohazard on 1/8 of an acre which is an area square of just 75 feet.

Really it isn't a good idea unless you have several cows to make it more efficient, but again you'd have to double your land holdings. Confining a large animal like that will inevitably lead to health problems in the cow, maybe develop a little mad cow.

You'd be better off with the pig & chickens for your protein and bartering for beef with a local producer because keeping the cow alive would be dependent on the inputs. Or, make an arrangement if you have the acres, let the producer's cow graze for a portion of the cut, & collect the dung for fertilizer or fuel.
