Even if a smart contract blockchain is decentralized and trustless, ie not controllable by any single entity, it's still only a tool that does what the user decides it does, and what it does depends on the data it is given. If the data it is being given is from a centralized source, that source can control the outcome simply by controlling the input, without even needing to control the output. LINK decentralizes the data input so that no single entity can control the input to the blockchain, thus insuring the output and input of the transaction is decentralized and trustless.

If you want the technical explanation of how it actually achieves this, you'll have to un-brainlet yourself first, but know that it is quite literally the "link" between the blockchain and real world data. It enables the global cloud computing power already currently running across all of the cryptosphere to become a tool of mass processing power to calculate real world problems and provide concrete value as a tool, without any ability for any party anywhere to tamper with the results or input to it.

For a brainlet example, if employee works X hours or provides X completed by a set deadline, pay X employee Y per hours logged, or Y per salaried contract. The employer is not able to dispute the mathematical truth of the employee having accomplished what was in the contract they both signed up for, nor is the employee able to get paid for not completing the contract. This is a simple example to start with, but you can expand it outwards to encompass any and all transactions that occur anywhere, for any reason, or any amount. If it is a transaction that is at all critical to any party on any level, it enables them to both lock themselves into a binding contract that does not rely on any other entity besides those two parties to ensure that safety and validity of that transaction.
If that sounds revolutionary and like a network that will be worth billions, it's because it is.
