Because of ease of identification and market popularity. ASEs and Maple Leaves are extremely recognizable, also difficult (but not impossible) to counterfeit, so they're more trusted. Same with other countries' coins, but they might not fetch as high of a premium because they're less desirable. YMMW obviously if you're outside North America.

My personal strategy was to invest 1/3rd of my stack into minted coins and the rest into bars. You spend less money on premiums with bars, and having enough minted coins to easily trade or liquidate as needed is good insurance. My bars are also from the RCM which gives them some credibility.

You can buy generic rounds, but make sure they're stamped with .999 on the bar. Again, it could be counterfeited easily, but gives it a better sense of credibility.
