I'll try to put it in a different way:
All you need to validly mine blocks is the utxo set and the previous block hash. If you don't need spent TXs to mine a block, that means they can be deleted (prune = remove = delete).

You would benefit from reading section 7 in the whitepaper if you want to understand this. I have attached it with the picture and marked the specific part mentioning pruning, or "discarding" as is the word Craig used
