Actually, I remember reading long ago that it was intentional. The episodes where they're pointy (and her horns are sharper too) are the earlier ones. Lum was initially designed to be a one time antagonist getting in the way of Ataru and Shinobu's relationship. The original gag formula was supposed to be Shinobu essentially having to deal with bizarre alien girls constantly coming to win Ataru over. Shinobu is the author's self insert and so was supposed to be the main girl. Unfortunately for her, Lum was SO much of a hit with her audience that letters came swarming in requesting more of her. And so, she had to keep drawing Lum, who initially played the role of the baddy, until eventually Lum naturally fell into the role of main girl.

Notice the very stark tonal difference from the start of the series until the more mid episodes/chapters. Lum in most of these episodes looks much more "devilish" on purpose because she's supposed to be the bad guy trying to lure Ataru away from Shinobu. It's also a lot more blunt with making everyone straight up hate Ataru's guts. By the end of the series, his mother barely says "I wish I never gave birth to him" like she used to always say pretty much as a catch phrase in the early parts of the show.

Eventually the alien antagonist designs ended up being recycled, and Mendou came into the picture to take the place that Ataru was supposed to fulfill as Shinobu's unloyal boytoy. It's hilarious how Shinobu and Ataru never officially broke up as far as we were shown, it was just softly brushed aside as it became apparent that Lum wasn't going anywhere. The later in the series you go, the harder it is to find Lum with pointy teeth/horns. Her features get a lot softer too, and she almost never is seen with this kind of expression.

tl;dr - the creator got cucked out of her own fantasy relationship in her own work of art, also lum was a badguy turned good guy
