Tokens are getting staked in nodes/oracles. As more tokens are staked, as higher the rewards can be. Jobs can have a minimum of staked LINK the oracle must provide. So for example, if you have sensible financial data, you can say that your job can only be done from people with 100.000 LINK in their node. These LINK work like an escrow. Because as more LINK are in stake (and as more rewards you can get) as higher will be the penalty also if you deliver false data.

Another reason for their own token is the ERC677 functionality. (see here: https://github.com/ethereum/EIPs/issues/677))
TransferAndCall. ChainLink needs this functionality. Thats why they cant do it with ether or another token.

Sergey said that the LINK token will the only possible payment for oracle providers. So to use the ChainLink network you have to buy these token. No FIAT and no other token (not without 3rd party). LINK is linked to ChainLink network.

Last reason is just the crowdsale/funding reason. So I would say ChainLink has in comparison to other project a pretty fair reason to have their own token.

A factor for preventing an 51% is the possibility to upload signed documents/certificates to your node/oracle. I think Sergey is in talks with docusign or another similar project to accomplish this. So you dont only need Token, and not only need much, you would also have to fake an E-signed document to attack the network
